Pour the broth, tomato paste, orange zest and pepper into the pan. Bring to a boil, reduce heat and cook, stirring, until the sauce thickens slightly. Remove fat from cooked pork and cut into small pieces. Place the meat in the sauce and cook together over low heat for 5 minutes. Place the filling on the tortillas, roll into envelopes and heat in the oven. Serve with gaucomole sauce, sour cream and fried beans.

Ingredients

  • garlic 3 cloves
  • chilli 1/2 teaspoon
  • cumin (cumin) 1/4 teaspoon
  • salt taste

Preparation

Finely chop the onion and garlic.

Fry the onion and garlic in vegetable oil for about 2 minutes over medium heat. After that, put them on a plate.

Cut the chicken into small pieces and fry in heated vegetable oil over high heat for 2-3 minutes until golden brown. Fry in small parts so that a crust appears on the meat faster, which will prevent the juice from escaping and the chicken will be juicier and softer. Salt to taste and mix.

Add onion, garlic and pepper, cut into strips, to the meat. Fry over medium heat for about 3 minutes.

Add beans, corn, cumin, ground chili pepper and tomatoes to the pan. I used canned tomatoes, but you can also use tomato puree or finely chopped peeled tomatoes. Zira should be ground or rubbed with your fingers to small grains. Mix well and fry over medium heat for another 3 minutes.

Grate the cheese on a coarse grater; it is better to use one that melts well when heated. Add cheese to the pan and stir.

Wait for the cheese to melt and remove the pan from the heat.

We prepare the tortillas, now we will assemble the burritos. Place 3-4 tablespoons of the prepared filling on the edge of the flatbread. And roll up the burrito as shown in the photo.

We wrap one end of the burrito with foil or parchment so that the filling does not leak out, and serve it to the table where a group of Mexican food lovers has gathered. Burrito ready! Bon appetit!

What is a burrito

A burrito is a Mexican food consisting of a wheat or corn tortilla and filling. The name comes from the Spanish word burrito - donkey. Some people don't understand the connection between a small pack animal and food, but it exists. The fact is that the treat appeared when Mexicans began to migrate to America due to the difficult, dangerous situation in their home country. American food was not to their taste, so they had to ask relatives to pass national dishes across the Rio Bravo River.

The transportation of delicacies was carried out by an old Mexican cook, who used a donkey named Burrito for this purpose. Initially, food was placed in clay pots, but then the man began to use tortillas, wrapping treats in them. So, it was possible to save a lot on clay products. The Mexicans did not understand that these were dishes and ate the whole thing, and soon they could no longer imagine vegetable salads and meat dishes without wheat tortillas.

Meat rolls began to be sold in the cities of Spain during the time of the conquest of lands and great geographical discoveries. Then they were called “shavaruma” and had a side dish in the form of sauerkraut. The idea of ​​food in rolls was later adopted by the Arabs, giving it its name - “shawarma” (“shawarma”). Today, such food is served in fast food restaurants, cafes and on the streets. There is another type of burrito - chimichanga, these are the same tortillas with filling, only deep fried.

The burrito can also be made from corn flour or a mixture of corn flour and wheat, and then fried in a dry frying pan. The filling includes all kinds of products and mixtures of them: boiled, stewed, fried meat and vegetables (can be raw), seafood, fruits (avocado, cherries, seedless grapes, strawberries, etc.), rice, beans, mushrooms, lettuce and cheese. In addition, tomato sauce, chili or sour cream is added for juiciness. Sweet burritos are seasoned with cinnamon, powdered sugar, zest, and squeezed lemon juice.

How to make a burrito

The tortillas themselves turn out bland. Try making a burrito at home, using the most popular types of fillings and sauces, giving the roll interesting flavor shades. After familiarizing yourself with well-known recipes, add your own ingredients, creating a dish to your taste. You can prepare the flatbreads in this way:

  1. Sift 3 cups of flour (wheat, corn), mix with a pinch of salt and 2 tsp. baking powder.
  2. Pour in 250 ml of warm water (kefir, milk), stirring constantly.
  3. Add 3 tbsp. l. vegetable (butter) oil. Knead elastic dough. The original recipe calls for the use of margarine or lard.
  4. Divide into 10 portions, roll out, fry in a dry frying pan.

The finished snack (already with filling inside) is fried in a frying pan, grilled or baked in the oven. Can be wrapped in foil or sprinkled with grated cheese for a delicious crispy crust. The process of creating a burrito does not end with preparing the tortillas and filling. It is important to give the snack a finished look by wrapping it correctly. The second method is more practical, since such a burrito is more convenient to eat - the filling will not fall out and the sauce will not leak out.

An invariable part of any burrito has always been the tortilla - this is the same flatbread in which the filling is wrapped. Mexicans use this flatbread not only for preparing a variety of dishes; for them, a tortilla is a plate, fork and spoon rolled into one. Almost any Mexican dish can be placed on a tortilla and eaten with the same tortilla, you can use it to scoop up the sauce, hold a piece of meat and extinguish the fire in your mouth that has raged from a small chili pepper. Traditionally, tortillas are baked over an open fire in clay pans called comals, but this is how they do it in Mexico, which is far from ours. We, residents of Russia, have three options for getting tortillas: buy the finished product in a store, although it’s not at all a fact that the bright packaging with a catchy name will contain exactly what you need, replace the tortilla with lavash, but then your burrito will be called a banal shawarma, or try baking your own Mexican tortillas. We lean towards the latter option and suggest starting to prepare a burrito by preparing the tortilla.

To make a tortilla at home, you will need 2 cups of corn flour, 1 teaspoon of salt, 50 grams of lard or margarine and about a glass and a quarter of hot water. Pour the flour into a deep bowl, add salt to it and stir. Grate the lard or margarine on a coarse grater and add to the flour. Stir and begin rubbing the flour and lard with your hands until the mixture begins to crumble. Then pour in hot water in a thin stream, remembering to stir the dough until it becomes soft and pliable. Add a little more flour and knead the dough, divide it into 10-12 pieces and cover with a warm, damp towel for a few minutes. Roll each piece of dough into a ball. Dust the board with flour and use a rolling pin to roll out each ball into a very thin cake. Heat a cast iron frying pan, reduce the heat and, without adding any oil, fry each tortilla on both sides for about 30-40 seconds. Cover the finished tortillas with a towel.

Half the battle is done! All that remains is to choose which burrito to cook. And there is plenty to choose from. You can make burritos with meat, poultry, vegetables, spicy and even sweet. You can wrap anything in a thin tortilla, for example, boiled beans or rice, meat and eggs, bell peppers and onions, and definitely some kind of sauce. We offer three burrito recipes: meat, vegetarian and sweet. Which of these options to prepare, which ingredient to remove and which to add is up to you.

Ingredients:
2 chicken breasts,

2 red bell peppers,

Preparation:
Remove bones from chicken breasts and rinse meat thoroughly under running water. Salt and pepper the chicken and place in a deep bowl. Squeeze the juice out of the lime and add 2/3 of it to the chicken. Leave the chicken to marinate for 15 minutes. Wash and cut the pepper into thin strips, peel and cut the onion into rings, chop the tomatoes. If you have a grill pan, fry the chicken on it; if not, you can use a regular frying pan. Place the fried chicken on a cutting board and let it cool, then cut into thin strips. Place tortillas on a clean surface, top with peppers, onions, tomatoes, herbs and chicken, and sprinkle with remaining lime juice. Grate the cheese on a fine grater and sprinkle on top of the tortillas. Form a burrito and place it in the preheated oven for 15 minutes.

Preparation:
Peel the seeds and cut the bell peppers into thin strips, peel and chop the tomatoes, finely chop the fresh herbs. Place a frying pan on the fire and heat a little olive oil in it, add green beans, chopped peppers and tomatoes. Simmer over low heat for 10 minutes, then add rice, salt and pepper and add herbs. Place the slightly cooled filling into tortillas, form a burrito and place in a preheated oven for a few minutes.

8 tortillas,
400 g cherry jam,
200 grams of fresh pitted cherries,
1 tsp cinnamon,
1 tbsp. powdered sugar.

Preparation:
Divide the jam and cherries evenly into 8 flatbreads and roll the tortillas into envelopes. Grease a baking sheet with oil and place the resulting envelopes on it. Brush each envelope with melted butter and sprinkle with cinnamon. Bake the sweet burrito in an oven preheated to 190°C for 12-15 minutes. Sprinkle the finished burrito with powdered sugar and serve.

Just the sight of these incredibly tasty burritos lifts your spirits; their aroma beckons you to take at least a small bite to enjoy new flavor combinations. It would seem that everything is already ready, wash your hands, take it and eat, but it was not so. A burrito without sauce is not a real burrito! Sauces are the quintessence of all Mexican cuisine; not a single national dish is complete without them, so why deprive yourself of the pleasure of preparing the famous salsa or guacamole.
