The recipes have been preserved, so you can take one of them as a basis. The bread prepared in this way turned out to be very tasty, had an amazing aroma, but most importantly, it was exclusively beneficial.

At that time, there was no such product as yeast, and therefore people got out this way.

Despite the fact that yeast helps bake wonderful pastries, airy and beautiful with a golden brown crust, it must be admitted that they do not bring any benefit to the human body at all. Another thing is to bake it with a special sourdough starter. Baking will be useful.

See for yourself by baking a portion of rich bread in a slow cooker, modernizing the cooking method that came to us from our ancestors. Everything should turn out flawlessly, and the result will please the whole family.

  5. I send it to bake in a multicooker on the “Bake” mode for about half an hour. A signal will sound - take out the bread and place it on the other side to bake. Be careful not to burn your fingers. Again, I set the same mode in the multicooker. I wait until 30 minutes are up.
  6. After the signal, I open the lid on the multicooker and transfer the bread to the pre-selected dish.

Cover with a towel and leave it alone for half an hour. When the product has cooled, cut it into portions. Look at the photo to see what delicious yeast-free rye bread you will get in the end. You can eat it in addition to main dishes.

Eternal sourdough bread in a home slow cooker

Cooking recipes are varied. Some of them require free time and a lot of patience.

For example, this method will require 7 days to prepare homemade sourdough for bread. The starter will sit for a week, and the resulting bread will be tasty and healthy.

As for sourdough, it is called an eternal product. Now you will understand why it received such a name. The thing is that it can last even for decades.

For example, the wife of a famous chef from Great Britain has been baking bread at home for 13 years, using the same starter. When making a batch, the housewife kneads a little dough and sourdough.

The latter product is an optimal replacement for yeast and powders that allow baked goods to rise, such as baking powder. A mixture of sourdough is made based on different products, for example, grains, a mixture of them in sprouted form, grapes, hops, malt.

The starter needs to be renewed and kneaded by adding flour or plain water. This way the dough maintains its density. Store it in cold conditions.

  • The components are simple and accessible to everyone. Take: 100 ml of plain water, the temperature of which will be about 36 degrees; 1 tbsp. psh. flour.
  • Ingredients for the dough: 1 tbsp. the resulting starter; 800 gr. flour; 3 tbsp. sour cream; 300 ml water; 1 PC. chickens testicle; 1 tsp salt; 2.5 tbsp. Sahara; 1 tbsp. rast. oils

Algorithm of actions:

  1. To make sourdough on water you need free time and patience. Follow all directions. I mix 2 components. The flour must be sifted in advance. You will be able to knead a dense dough.
  2. I cover the lump with food. film and put it in a warm place. For example, it could be a window sill. The dough will sit there for 72 hours.
  3. After three days the dough will become covered with pores. You will need to remove the layer from above and throw it away. In a clean container, dilute 70 ml of water, dough and 100 g. flour. I knead the lump again. I put it in a new bowl, wrap it in film and leave it on the windowsill for 12 hours.
  4. After this time, I again repeat the previous procedure, removing the top layer and mixing a new lump. This time the dough needs to rest, but only for 8 hours.
  5. I repeat my steps again, generally until there is a couple of times more leaven, taking the first batch of dough as the starting point. As a rule, results can be achieved within a week. The resulting mixture can be stored well in the refrigerator.
  6. To start baking bread in your slow cooker, you need to take out the starter and wait until it becomes warm. You only need to take 1 tbsp from the total mass. sourdough, and what remains is returned to the refrigerator.
  7. Kneading dough for baking yeast-free bread in a multicooker involves mixing the starter with chicken. egg, water and sugar. Afterwards you need to add sour cream, salt and vegetable mixture into the mixture. oil. Flour should be added to the dough a little at a time; it is important to sift it first. Adding flour, kneading the dough, adding it again to achieve a soft consistency that will not stick to your fingers. I propose to finish this with anguish.
  8. I will do the kneading on the table, so I cover it with 2-3 tbsp. flour. I knead with my hands for about 5 minutes. Cover the mixture with a napkin and leave it undisturbed for an hour. If you want, you can leave the dough on the table, or you can transfer it to a bowl and send it to a warm place. After an hour, you need to knead it again and transfer it to the form in which you will bake the bread in a slow cooker. Be sure to anoint the sl. butter a bowl.
  9. The bread will be baked in a multicooker in the “Baking” mode for 1.5 hours. As soon as the signal sounds, it is worth turning the mass over to the other side so that the dough there is also baked. 30 minutes will be enough. You can turn over using a steaming bowl.
  10. Carefully place the prepared yeast-free bread and cover the baked goods on a platter with a napkin. You need to let the bread rest, but you can eat the rye product when it has cooled down.

Irish bread without yeast

You can even cook rye bread in a slow cooker using the Irish method. These people believe that kneading should be done quickly, and there is no point in stirring the mass for a long time. The bread is famous for its crust and flavor.

Components: 200 gr. white and rusty flour; 2 tbsp each oats cereal and sugar; 1 tsp each soda and salt; 1.5 tbsp. kefir

Replace kefir without fear with fermented baked milk or yogurt. Look at what you have at home, even milk will do if you don’t want to run to the store. The main thing is that they are fat. The method is universal; you can change the amount of sugar or eliminate it altogether.

Algorithm of actions:

  1. Mix soda with 1 tbsp. apple vinegar, waiting for a reaction. Mix flour with the first mixture, sugar, salt. I add oats to the mixture. flakes.
  2. I make a hole in the mixture and pour in half of the kefir. I'm in the way.
  3. I add the rest of the kefir and knead the dough to a homogeneous consistency, very moist in its composition. I make the knead right on the table, covering it with flour. I don’t knead too much, the dough may not be uniform, this won’t ruin the dish.
  4. Forming a mass. Using a knife, I make a crosswise cut and spread kefir on the top of the bread. I put the dough. I close the lid of the multicooker and set it to “Bake” for 50 minutes.

The time must be set in each case separately in the multicooker, because the power of the devices is different. For example, I live in Redmond, so I spend about an hour baking. Make sure that the bread does not burn, switch sides of the baked goods and continue cooking for another 20 minutes.

To know when the bread is ready, use a wooden stick by inserting it into the center of the baked goods. If the skewer is clean, it means the mixture is baked. By the way, there is another way: you can knock on the bottom of the baked goods; if there is an empty sound, it means it’s time to take it out, everything is ready.

I advise you to serve Irish bread after you have taken it out of the device. Baking from a slow cooker will be especially tasty if you coat it with salt. butter and top with jam. Eat for your health!

Kefir bread in a slow cooker is soft and airy, to which I added oatmeal, thereby making it healthier. Remember the benefits of oatmeal? If not, be sure to find out. And how wonderful it turns out.

It was a pleasure to work with this fluffy and tender dough. Rise quickly twice, smell when baking bread in a slow cooker stood wonderful. The crumb turned out dense, porous, fragrant.

We will need:

1 - 1.5 teaspoons dry yeast

0.5 cups warm water

1 tablespoon sugar

0.5 teaspoon salt

250 ml warm kefir

3 tablespoons or 20 grams of oatmeal

300 grams of wheat flour

2 tablespoons of unrefined vegetable oil.

Bread in a slow cooker with kefir

Let's start cooking.

Let’s start, as usual, by diluting dry yeast in warm water with added sugar until it is activated, that is, the “cap” appears. After this, add salt, the remaining sugar (if you divided 1 tablespoon before), vegetable oil, warm kefir and oatmeal:

Mix everything and add sifted flour. We knead the dough, knead it with our hands, it is very pleasant to knead it, it is soft and manageable. At the end, they formed a bun and put it in a warm place to proof. 1 hour was enough for me.

This is how the dough rose 1 hour after the start of proofing:

Knead the dough again to saturate it with oxygen and place it in a multi-cooker pan greased with vegetable oil. And set it to “Warm” for about an hour:

In principle, you don’t have to open the saucepan so that the dough doesn’t fall off, but I opened it to take a photo, and this is the state the dough was in.

Have you ever baked yeast-free bread in a slow cooker? If not, and if you are interested in baking bread, I recommend making Irish Soda Bread. This is bread with a rough, crispy crust and a dense, slightly moist, but tender crumb. This perfect country bread is served alongside a hot bowl of soup or stew. Or with tea and coffee, cut into thick slices and spread with butter and jam. The leftovers make wonderful croutons.

This bread is made very quickly - Irish housewives in the old days would whip it up after a hard day's work and serve it almost hot. Today, when the majority of people buy bread in stores, Irish soda bread is baked mainly on March 17 - St. Patrick's Day, whom the Irish consider their heavenly patron. This is a national holiday in Ireland where people hold parades, wear green clothing and eat traditional foods. Outside of Ireland, St. Patrick's Day is celebrated in the United States. It is very popular there, they say: “On St. Patrick’s Day everyone wants to be Irish.”

Although this bread is known as "Irish soda bread" outside of Ireland, it is never called that in its native country. More often you can hear the name “cake” or “bread-cake”. In the old days it was called “spotted Dick” or “spotted dog” - because of the large number of raisins that were added to the bread recipe on holidays. However, in its simplest form, Irish soda bread is made with only four ingredients: flour, salt, baking soda and kefir (sour milk).

I can’t help but mention another amazing coincidence: Irish yeast-free bread is very similar to bread, which is also baked with soda and kefir - perepechka (perepichka). Given the general similarity in the fate of the Ukrainian and Irish people (oppressed for centuries by a stronger neighbor), the similarity of culinary traditions is amazing.

When making Irish bread, it is important not to mix it too much. The kneading is done very quickly, and once the dough is formed into a flat circle, it is placed in the oven. This creates an uneven, lumpy surface, followed by the crispy, rough crust that this bread is famous for.

A cross-shaped cut is made on the top of the loaf; this prevents it from cracking during baking, and also makes it easy to break freshly baked bread into quarters. In the old days, Irish housewives said that the cross attracted good fairies to protect bread and home.

To bake yeast-free bread in a slow cooker, I use two types of flour - white wheat and rye. I'll also add a little sugar for sweetness and a small handful of rolled oats.

For a recipe for yeast-free bread in a slow cooker, high-fat sour milk, yogurt or fermented baked milk is best suited, although in the past it was most often made with whey remaining after churning butter. You can also replace kefir with milk by adding a tablespoon of apple cider vinegar or lemon juice to a glass of milk and letting it sit for an hour or two in a warm place.
