  • 2 tablespoons rock salt;
  • 1 teaspoon granulated sugar.

Rinse the caviar with water and let it dry a little in a sieve. In the meantime, it is necessary to boil the water and dissolve the bulk ingredients in it so that no traces remain.

Cool the resulting brine to about room temperature (about 30 degrees is fine) so that the eggs do not harden and cook. Pour brine over them and leave for at least a couple of hours.

Drain the caviar through a colander again and let the product dry. Using this express method, it is better to salt it almost immediately before eating, and then the finished dish can be stored in the refrigerator for no more than three days.

“Lightly salted” with vegetable oil

For the same 500 grams you will need:

  • 15 grams of salt and sugar;
  • 25 grams of refined, odorless oil (this is important!).

How to properly salt with butter? In a glass jar, mix the oil and bulk ingredients, stir to dissolve.

Salting red caviar according to this recipe involves the following steps.

How to salt caviar (step by step)

Step 1. We process the fish and extract the eggs. Pour a layer of salt into a saucepan or other deep dish and place the caviar on it.

Step 2. Finely chop the onion, you can even grate it or chop it using a blender.

Step 3. Place onion, pepper and salt on top of the red caviar. We make several layers in this way.

Step 4. We pour cream over everything on top - after a while it will flow down and be absorbed into the underlying layers.

Step 5. It is enough for the product to stand for 1-2 hours in the refrigerator - and you can enjoy the delicacy.

Well, to pickle red caviar for future use, you can use the dry salting method (first recipe). You need to put the eggs in a jar and pour vegetable oil on top of them to further protect the product from drying out.

Then just tightly close the jar with a lid (as in the photo) and put it in the refrigerator. Caviar prepared in this way can be stored for 2-3 months.

Just 10 years ago, would it have been possible to imagine a holiday table without sandwiches with red caviar? Now this time is happily forgotten, however, many people try to salt caviar on their own.

Very little is known about how to pickle red caviar according to all the rules at home. except perhaps residents of seaside towns, fishermen and those who have worked in the fishing industry for a long time. This delicacy is not cheap and not everyone can buy a jar of caviar for the holiday. But, sometimes you can buy red fish and find eggs with caviar in it.

For those who don't know. Osts are sacs inside the female fish that contain eggs.

In general, you can purposefully start buying red fish with caviar. Some do this quite successfully, preparing themselves a delicacy for the whole winter, and making excellent canned fish from their own fish. When we lived on Sakhalin, we also did this, fortunately during the fishing season we asked for a penny for one tail (that is, a fish carcass).

We also observed sad pictures of poaching, when the fish were gutted, the eggs were taken, and whole mountains of carcasses rotted along the banks of the rivers where pink salmon rose to spawn. But let's not talk about sad things. Now I want to tell you some secrets about salting caviar, real ones from Sakhalin!

How to choose red fish with caviar

Ideally, caviar should be salted from freshly caught fish. At least freshly chilled. Then the caviar turns out tender, not hard. In addition, caviar from frozen fish is more fragile and bursts faster. But, if there are no options, you can indulge in this one.

First of all, what types of slaves are suitable for us:

  1. Pink salmon
  2. Red salmon
  3. Coho salmon
  4. Trout
  5. Salmon

These are the most common species, besides them there are also char, kunja, and less common and little-known names.

We need to choose a female, because it is in her, by definition, that we will find the coveted caviar. It makes no sense to determine by size, since the females of pink salmon are much larger and much larger. But this is easy to do based on the scales and body shape.

When pink salmon enters a river to spawn, from sea water to fresh water, light spots appear on the fish, it becomes lighter. Male pink salmon have a more convex and high back. The head is also larger, with a massive “nose”. Sometimes the jaws overlap each other and the teeth are visible. The females have a neat, round head, and the carcass itself has a regular, “fishy” shape.

Under no circumstances should you put frozen fish in water or in the microwave to defrost, otherwise you will spoil the caviar and it will all leak. First, simply put the fish brought from the store into the refrigerator overnight, only then take it out to completely defrost.

You need to rip open the belly carefully so as not to break through the ovaries, but it is better to start cutting from the ridge, as I already wrote in the article.


Salting red caviar at home

The fish was chosen and prepared, but we also need a sharp knife, preferably not very long, with a narrow blade. You will need medical gauze and coarse pure salt, why I write “clean”, sometimes you come across dark, gray salt, you don’t need to take that.

How to clean eggs from caviar

It will be a very difficult, rather tedious task to clean the caviar from the film of the egg. Once you get the hang of it, you can rub the caviar through the grate, instead of which a badminton racket is often used. All the eggs fall into the cells, and the film remains on the grates. Here you need to get used to it and just wipe the caviar, and not push it through.

Another good way to clean the yastiks is to take a piece of gauze folded in four, soak it in a strong brine, fold all the yastiks and on both sides, the two of us take hold of the ends and begin to roll the caviar over the gauze, all the pieces of film remain on it, then carefully spawn the caviar dump into a basin.

But I gave these methods if there is a lot of caviar, several kilograms. We are used to always doing it using basins. And then you sit and eat a sandwich from a loaf cut lengthwise, spread with still warm caviar, washing it down with coffee from a half-liter mug, and even adding it to your mouth with a spoon.

If there is not much caviar, say from one fish, then you can simply pour hot water into a cup (so that only your hand can tolerate it), sprinkle a little salt and put the eggs there. Just mash them a little in water and they will easily separate; all that remains is to remove the entire film, since it tastes unpleasantly hard.

How to make fresh salted caviar


Lovers of lightly salted caviar just need to reduce the salting time. Then the eggs will take less salt and will be just to your taste.

We clean the caviar, heat the brine, and take twice as much water as the caviar. Add two tablespoons of salt and two teaspoons of sugar to a glass of water. Stir and pour in caviar. If we let strongly salted caviar stand for about 20 minutes, then for the lightly salted version 10 is enough. Then we drain the brine, and put the caviar on cheesecloth and let it drain.

The disadvantage of this method is that the caviar will not be stored for long; it is advisable to eat it within a week. Store in glass jars with lids, add a little vegetable oil on top.

Dry salting of caviar in jars

There is no easy way. I was surprised when I recognized him. We select the freshest fish, preferably sockeye salmon or chum salmon, they have stronger caviar. Carefully, without removing the eggs, rinse and place on a plate. Salt with regular salt on both sides, just a pinch, and leave for 20 minutes. Take a tablespoon of salt for half a kilo of caviar.


How to salt chum salmon caviar for long-term storage

Chum salmon caviar is large, light, and quite strong. This is just right to salt for a long time, for long-term storage. It rarely bursts or flows, unless the salting technique is not followed.

For a kilogram of caviar, take 3 liters of water and a kilogram of coarse salt. Make brine from water and salt and let cool to room temperature. Place the caviar, cleared of film in advance, into a pan with brine and leave for 20-25 minutes.

Afterwards, take a colander, cover the bottom with several layers of gauze and let the water drain. Place the caviar in sterile jars and pour vegetable oil on top and put it in the refrigerator.

We always soak caviar only in salt water, never in fresh water. We use coarsely ground salt; fine, ordinary caviar quickly bursts and the caviar “flows.”

Now the most interesting part is preparing the brine. No “two or three tablespoons...” just strong brine and coarse salt. It is done very simply, boil water, add salt until the crystals can dissolve, you will see that they will settle to the bottom. You can check the strength of the brine by putting peeled raw potatoes in it; it should not sink.

The brine should be twice as large in volume as the caviar. We put the caviar there, just pouring it in. The time must be strictly recorded; it is different for different caviar. For pink salmon caviar, 7-9 minutes are enough, no more. Chum salmon caviar is larger and stronger and needs 12 minutes. If the caviar is young and small, then five minutes is enough, but such caviar cannot be stored for a long time.

Afterwards, the finished caviar can be placed in jars, it is better to pour vegetable oil on top so as not to dry out, and store it in the refrigerator. Properly salted caviar can be stored for a whole year.

We also did this, sometimes I cut a fish, and there is caviar, there is no time to mess with it, but I can’t throw it away. We simply place whole eggs on a plate and sprinkle with salt, leave for half an hour, then rinse in boiled, lightly salted water, and separate the eggs from the film. Caviar salted in this way should be eaten immediately.
