Ingredients

  • 3 eggplants;
  • 3 cloves of garlic;
  • 1 tbsp. l. honey;
  • 4 tablespoons of oil;
  • 100 ml soy sauce.

How to quickly cook grilled eggplants in the oven

Cut off the ends of the eggplants and slice each lengthwise into 4-5 millimeter slices. You can also make mugs, but it will be much faster.

Chop the garlic, combine with vegetable oil, add soy sauce and honey. Stir until dissolved. Place a few slices of eggplant on the bottom of the bowl, pour over the sauce, then another layer of vegetables, marinade, repeat. Pour the remaining marinade on top.

As soon as the oven warms up to 220 degrees, place the eggplant slices on the grill. Don't forget to place a baking sheet underneath. We reduce the temperature to 200 degrees. Option 3: Grilled eggplants in the oven (halves)

It is not necessary to bake the eggplant slices or slices in the oven; the halves turn out very tasty and juicy. In addition, they take up much less space; you can cook a whole kilogram at a time. We choose eggplants of the same size with small seeds.

Step 4:

Place the halves cut side up on the grill. Place in the oven at 200 degrees, reduce the temperature to 180. Cook for about 22-25 minutes. It is advisable to check at the very end whether the vegetable has reached softness.

These eggplants are also delicious in a spicy version. To prepare, add one chopped pod of Ogonyok pepper or chili to the filling. Can be replaced with real Georgian adjika.

Option 4: Grilled eggplant in the oven with bacon

Eggplant is one vegetable that just needs fat or oil, so it goes perfectly with bacon. Another way to prepare flavorful grilled halves is in the oven. Choose bacon cut into thin strips. You can cook this dish simply with lard.

Ingredients

  • 3-4 eggplants;
  • 80 g bacon;
  • 2 tbsp. l. olive oil;
  • 3 cloves of garlic;
  • 2 tbsp. l. salt;

Eggplants for grilling in the oven can be cut in any way, but usually they are made into mugs or plates. The thickness is about half a centimeter. Cut off the ends on both sides and discard. If the skin is no longer soft, then it is advisable to peel the vegetable.

Mix the oil with balsamic vinegar, add salt and ground pepper, you can take a mixture of peppers, add vinegar. Cooking eggplants without garlic is a crime. Peel a few cloves, cut into slices and add.

Pour the prepared marinade over the eggplants, stir and cover. Leave for half an hour, maybe longer. It is advisable to stir occasionally, as the oil and juices flow down. About ten minutes before the end of marinating the vegetables, you need to turn on the oven, set it to 200 degrees.

We prepare the grill. Immediately under it you need to select a baking sheet onto which the juice and excess marinade will drain. It is advisable to additionally cover the baking sheet with foil or paper so that you don’t have to wash it vigorously later.

Place eggplant pieces on the grill and shake off excess marinade. Place it in the oven and cook for 12-15 minutes.

Pull out the grill, turn the eggplants over to the other side, and brush with the remaining marinade from the bowl. It is convenient to use a silicone brush for this. We do everything quickly so as not to cool the oven.

Alternatively, you can cook whole eggplants over coals. To do this you will need ordinary food foil. In addition to eggplants, tomatoes, 100–200 grams of any hard cheese, about 100 grams of butter, garlic, and herbs to taste will also be used.

Cooking technique:

  • Peeled and washed eggplants are cut lengthwise, but not completely, into thin slices several times. Each vegetable opens up like a book.
  • Eggplants are salted and peppered.
  • Prepare a mixture of oil and garlic. The peeled cloves are passed through a press and mixed with pre-softened butter.
  • The inside of the eggplants is coated with this mixture.
  • Tomatoes and cheese are cut into thin circles and slices, which then need to be placed in turn on all the slices of each eggplant.
  • Vegetables prepared in this way are wrapped in foil.
  • So, in foil, they are baked over small coals until they become soft. Vegetables need to be turned over from time to time.
  • Cooking time is about twenty minutes.
  • The finished baked eggplants are then removed from the foil and served. They can be sprinkled with herbs (parsley, dill, cilantro).
