Put the egg, vanilla, butter and sugar in a deep bowl. Beat everything with a whisk or mixer until smooth, there should not be any grains in the resulting mass. We pass the cottage cheese through a meat grinder or grind it through a sieve, then it will be finer. Mix cottage cheese with other ingredients in a bowl. Next, add semolina to the resulting mixture, then mix everything well again. Let the dough rest in a warm place for about an hour.

Next, flour the work surface and spread the curd mass there. Mix it well with your hands and make sausages out of the dough. Cut the sausages with a knife into pieces, they should not be too thick. It remains only to weld your products.

Put the pieces in boiling slightly salted water and mix, otherwise they will start to stick to the walls of the pan. After about five minutes, take out the dumplings with a slotted spoon and arrange them on plates. Pour melted butter over the top. Both honey and condensed milk are suitable for such lazy cottage cheese dumplings.

What could be better for a child than a dish made from cottage cheese. But, probably, we all remember our favorite recipe as in kindergarten. Until now, this is my favorite dish, even my adult son loves to indulge in such children's dumplings.

We will need to take:

  • 600 gr. cottage cheese
  • A glass without a slide of flour
  • 2 eggs
  • 30 gr. melted natural butter
  • Vanilla sugar
  • pinch of salt
  • 2 large spoons of regular sugar

Cooking process:

We wipe the cottage cheese through a sieve, if it is soft enough, then you can simply knead it with a fork.

Add salt, vanilla sugar, a small spoon is enough, add regular sugar and break the eggs. We mix the mass well. Sift half of the flour into it, stir.

Sift the second part of the flour directly onto the table and lay out the dough. Now it needs to be rolled out. We roll sausages from the finished dough and cut dumplings of the desired size.

Boil for five minutes in slightly salted water. Serve with jam or condensed milk. For children's dumplings, you can make homemade cottage cheese, we sometimes make it from goat, it turns out delicious.

  • 1 large egg
  • 1 st. l. with a pile of sugar
  • 200 g cottage cheese
  • 4 tbsp. l. decoys

How to cook:

Lightly beat the egg with sugar and a pinch of salt. Add cottage cheese, mash it with a fork. Add semolina, mix. Leave the mass for 15 minutes so that the semolina swells. Boil until the dumplings float to the top (while you are throwing balls, the first ones will already start to float, the process is fast). Cherry dumplings are an amazing dish that can now be cooked at any time of the year. And if you use this lazy recipe, the process will not take much time. The amount of flour will depend on the moisture content of the cottage cheese, you may need a little more, for dumplings you can take fresh cherries or frozen berries.

Ingredients

  • 0.25 kg of cottage cheese;
  • 0.5 cups of cherries;
  • 2 tbsp. l. Sahara;
  • egg;
  • 4 tablespoons of flour;
  • 20 g butter.

How to cook

We make the simplest dough for lazy dumplings. Cottage cheese, an egg and a couple of tablespoons of sugar are rubbed, we introduce a pinch of salt. If you can’t cope with lumps, then you can take a blender. After bringing the mass to homogeneity, add flour. We make soft dough. Immediately transfer it to a sprinkled board.

We remove the seeds from the berries. If the cherries are after the freezer, then it is advisable to squeeze them out a little more, the curd dough does not need extra juice.

First, we make a long sausage from the curd mass with our hands, then flatten it or sprinkle with flour and lightly roll it with a rolling pin. We need a ribbon. We spread a chain of cherries along its entire length.

Now we lift one edge of the ribbon and hide the berries. You should get a sausage with cherries inside. Cut it into pieces, which will be dumplings. We quickly align each and press the berry so that it does not fall out during cooking.

We launch cherry lazy dumplings into boiling water, boil for two minutes. Remove with a slotted spoon, carefully shaking off any droplets. We throw a small piece of butter so that lazy dumplings do not stick together. Stir gently, serve.

It is important to cook dumplings in a sufficient amount of water, this will positively affect the taste and shape. For 200 grams of dough, you need about a liter of liquid. It is also important not to neglect the addition of salt to the water, it significantly improves the taste of the dish.

  • 250 g cottage cheese,
  • 2 eggs,

  • 1 st. l. butter,

Another option: do not boil the dumplings in water, but put them on a wire rack, pour water into the slow cooker according to the instructions and cook them in the “Steaming” mode for 40 minutes.

Lazy dumplings with rosemary and olive oil

Each of us has dishes that they have not eaten since childhood. I had a difficult relationship with lazy dumplings. It was worth eating to find out - dumplings do not have to be wet and slippery. If they are fried in oil, the cottage cheese will be covered with a wonderful crispy crust. This food can be cooked for dinner and invite friends. Dumplings, like Gogol's in "Evenings on a Farm near Dikanka", will jump into your mouth by themselves! Similar food is prepared not only from cottage cheese, it can also be made from dough, semolina or potatoes. In Ukraine it is called "dumplings", in Italy - "gnocchi", in Germany - "kloss", in the Czech Republic - "dumplings" ... How and when they migrated to Russian cuisine is not known. I made the dumplings savory and added a bunch of spinach to the cottage cheese, but you can use any other greens.

Ingredients

  • 350 g good dry cottage cheese
  • 150 g of any hard cheese
  • 1 egg
  • 1 cup flour
  • 100 g spinach
  • 3 garlic cloves
  • a few sprigs of rosemary
  • chili peppers, fresh or dried
  • 100 ml olive oil

Cooking:

  1. Heat up a saucepan over medium heat. Coarsely chop the spinach, place in a saucepan and cover with a lid. After a minute or two, the leaves will soften, remove the saucepan from the stove and let the spinach cool.
  2. Grate the cheese. In a bowl, mix cottage cheese, cheese, flour, spinach, egg, add salt. Knead the dough. If the cottage cheese contains a lot of moisture, then more flour will be needed. The dough should not be too sticky to your hands.
  3. Sprinkle the working surface with flour, lay out the curd dough, divide it into two parts and roll a sausage from each. If the dough sticks to your fingers, add more flour. With a knife or hand, cut the sausage into dumplings, slightly larger than a walnut. Dip each dumpling into the flour, shake off the excess and place the dumplings on a baking sheet lined with baking paper. Cover with cling film and refrigerate for at least 30 minutes. You can make dumplings for the future, put them in a container and send them to the freezer.
  4. Bring water to a boil in a five-liter saucepan, salt, carefully place a third of the dumplings, stirring so that they do not stick to each other. As soon as the dumplings float, wait

Lazy dumplings with potatoes and cottage cheese


Vareniki, including those prepared according to a lazy recipe, can be not only sweet, but also salty. To do this, in the process of kneading the dough, you can not add sugar to it, but pour more salt. But it will be much tastier if you replace the sugar in the recipe with other ingredients, such as fresh herbs or potatoes.

Lazy dumplings are prepared in literally 10 minutes, and you can choose the most diverse filling for them. Such dumplings are especially good in summer with juicy raspberries. But if there is a supply of frozen berries in the refrigerator, then you can delight yourself with a delicious dish all year round!
Lazy dumplings are curd balls, they, like ordinary dumplings, must be boiled in boiling water. By the way, to make lazy dumplings more tender, I add rice flour instead of wheat flour. Lazy dumplings stuffed with raspberries or cherries

  • 3 art. spoons of rice flour (wheat),
  • vanillin,

For the preparation of lazy dumplings, the cottage cheese should not be wet and creamy, the most common briquette will do. In a bowl, mix the cottage cheese with the egg.


Add dry ingredients: flour, vanilla, a pinch of salt, sugar to taste. Mix thoroughly to get a homogeneous mass.


Now we take half a tablespoon of the resulting mass, roll the balls with our hands, and then make round cakes out of them.


Put 2-3 raspberries in the middle of each cake, you can sprinkle a little with powdered sugar. If the berry is frozen, then it is not necessary to defrost it. Instead of raspberries, you can also take pitted cherries.


Again we roll balls from cakes, thereby closing the filling inside. We do this carefully so that the raspberry juice does not leak during cooking.


In boiling, slightly salted water, boil lazy dumplings with raspberries. After surfacing, cook for 3-5 minutes.


Put the dumplings on a serving dish and let cool slightly. Serve with sour cream or yogurt.
