I continue to (torment) cooking Indian cuisine.

It is clear that not a single Indian was harmed during cooking and they cook differently in India.
But there are other products, air, water.
That’s why we have a local option with local specifics.

Ingredients:
● Potatoes -4-5 pieces (medium)
● Paneer -200-300 g
● Tomatoes or tomato paste (3 pcs or 3 tbsp)
● Fresh ginger - to taste, 5 centimeters
● Onions -1-2 pcs.
● Carrots - 1 pc.
● Garlic – 3 cloves
● Classic unsweetened yogurt (can be replaced with cream) - 300-400ml
● Garam masala or curry masala - 1-2 tsp, to taste
● Zira, turmeric, hot pepper - to taste
● Greens (preferably cilantro) – to taste
● Raisins - a handful (optional)
● Flour -2-3 tbsp.
● Salt, sugar - to taste

1. Take ours.
Grind it with herbs in a bowl. I did everything just with a spoon.
Clean and boil the potatoes.
Let cool slightly and mix together with paneer in one bowl.

2. Add some flour, cumin and masala to the mixture.
Salt to taste.
Mix everything thoroughly.
Form small balls from the mixture.

3. Fry the kofta in a frying pan until crusty. But without fanaticism. I didn't fry it too much.

4. Here is our beautiful jacket ready. Set the balls aside.

5. Cut tomatoes, onions, garlic, carrots, grate ginger.
Blend them in a blender until they become paste-like.
I took both fresh tomatoes and tomato paste.
Don't forget to add sugar to balance the acidity in the pasta.
Before pouring the mixture into the frying pan, let's start with the spices.
Place cumin, turmeric, masala and hot pepper into hot oil. I even put in some illegal coriander. I like him.
Let the spices warm up and open for about 30 seconds.
Then we spread our vegetable mixture.
Simmer for 10-15 minutes over medium heat.
Add yogurt or cream, a handful of raisins
Mix. Salt to taste. Add a little more masala.

6. Carefully immerse our balls in the mixture.
Reduce the heat to low, cover with a lid and simmer for 15-20 minutes.

7. As a result, we get a wonderful dish.
When serving, sprinkle with cilantro.
If you have cashew nuts, you can decorate the dish with them.
