Cooking process:

I would like to say right away that for this cucumber preparation recipe, you can use not only small and medium vegetables. You can cut large, but not overripe cucumbers into large circles and put them in jars. Banks can be used any, the main thing is to sterilize them in advance. We will put cucumbers in small half-liter jars.

Before sterilizing the jars, you need to wash them with any detergent, you can also use laundry soap(odorless) or baking soda. You can sterilize jars as usual over steam or in a slow cooker, microwave, oven. Choose the method that's right for you.

Do not forget about the lids, they also need to be sterilized or just rinse and fill with boiling water and leave for 5 to 10 minutes.

The cucumbers you have chosen should be thoroughly washed in two waters, dried. At the bottom of each jar we lay out black peppercorns, sprigs of dill and bay leaf. Now arrange the cucumbers in jars. In small jars, you need to cut the cucumbers into circles or large sticks. Set the cucumber jars aside and prepare the marinade.

Pour water into a deep saucepan and put it on fire, bring to a boil and then add salt, granulated sugar, ketchup and vinegar. Gently stir in the marinade and bring to a boil. Boiling marinade with ketchup, pour jars of cucumbers "under the shoulders".

Close the jars with prepared lids and sterilize for 10 minutes. If you have liter jars, then we sterilize them for 15 - 20 minutes.

We roll up jars of hot cucumbers, and, turning over, leave in this position until completely cooled. We store preservation in a cool place.

For 5 liter jars:

  • about 3-3.5 kg of small cucumbers
  • 1l 750 ml water (about 7 glasses), I take a little more, literally half a glass
  • 2 tbsp salt
  • 1 glass of vinegar
  • 1 cup of sugar
  • 8 tbsp with a slide of chili ketchup TORCHIN (less possible)
  • "bouquet" for preservation: dill inflorescences, horseradish leaf

For each bank:

  • 2-4 garlic cloves,
  • 5-6 black peppercorns

To make Cucumber Chili Ketchup you will need:

  • Cucumbers - how much will go in.

Marinade for 4 liter jars:

  • Ketchup Chile (300 grams);
  • 1.5 liters of water;
  • One glass of 9% vinegar;
  • One glass of sugar;
  • Two tablespoons of salt.

For each bank:

  • 2 cloves of garlic;
  • Horseradish leaf;
  • Umbrella dill;
  • 5-6 peas of allspice.

Preparing vegetables for canning

For canning, it is better to use freshly picked small cucumbers. We wash them under running water, leave them soaked in cold water for 2-3 hours. This is done so that the cucumbers turn out crispy. We cut off their butts.

We put dill, horseradish, pepper and garlic on the bottom of clean and dry jars. We lay the cucumbers in jars, pressing tightly one to one.

We stack so that there is as little void as possible. If the cucumbers are large, then you can cut them lengthwise into several parts.

Cooking marinade

Pour water into the pan, let it boil, add ketchup, sugar, salt to it. We mix everything well. We wait until the marinade boils, boil for 3-5 minutes. At the end, add vinegar and mix.

Fill jars with vegetables with boiling marinade to the very top.

We put the jars in a pot of heated water so that they do not burst due to temperature differences. Water should cover more than half of the jar. Cover with lids. We sterilize for 10-15 minutes.

At the end of sterilization, we take out the jars from the water and roll them up.

You can store such preservation with ketchup at room temperature.

This recipe is for 4 liter jars cucumbers.

For cooking, take:

  • Small cucumbers;

For one liter jar:

  • A couple of currant leaves;
  • A couple of cloves of garlic;
  • One small dill umbrella.

To prepare the marinade you will need:

  • 8 tablespoons ketchup
  • 75 milliliters of vinegar;
  • 100 grams of sugar;
  • 5 tablespoons of salt.

We prepare cucumbers as in the previous recipe: we wash, soak in water and cut off the buttocks.

We take four clean, sterilized jars, put currant leaves, dill, garlic in them. Optionally, you can add bay leaf, black pepper.

Fill jars with cucumbers with boiling water. You need to pour boiling water little by little so that the jar has time to warm up evenly and does not burst. Fill the cucumbers to the very top. Cover jars with lids and leave for 30 minutes.

After a while, using a special lid with holes, drain the water from the cans into the pan. Add sugar, vinegar, salt and ketchup. We mix everything well.

We put the pan with the marinade on the fire and bring to a boil. Then pour the boiling marinade into jars of cucumbers.

Roll up jars with lids. Cucumbers with chili ketchup are turned over, put on the lids. We wrap it with a blanket and leave it in this position until the preservation has completely cooled.

  • small cucumbers - 1 kg,
  • water for marinade - 0.5 l,
  • vinegar - 0.5 cups,

How to cook pickled cucumbers with chili ketchup for the winter

For marinade per 1 liter cold water add 2 tablespoons of salt, 2 cups of sugar and a pack of chili ketchup.

Boil and add a glass of vinegar. Increase or decrease the amount of marinade as needed. So, for 1 kg of cucumbers, we will need to reduce the amount of marinade by about half with the maximum filling of cans.

While the marinade is on fire, let's take care of the cucumbers. On both sides of the fruit, cut off the tips. At the bottom of the sterilized jar we put chopped garlic cloves, bay leaf and allspice peas.

Fill the jar with cucumbers, and put 1-2 umbrellas of fresh or dry dill on top.

Pour the marinade with vinegar into the jar.

Cover with a pre-boiled lid and put to sterilize in a water bath in a saucepan. At the bottom we put a stand for cans. The water in the pot should be warm. We sterilize a liter jar from the beginning of boiling water for 10-12 minutes until the cucumbers turn olive.

Roll up the lid and turn the jar over. We hide away so as not to be tempted by cucumbers until winter. This amount of cucumbers made 1 liter jar of cucumbers in chili ketchup and one half-liter jar.
