Cooking time: 120 minutes / Number of servings: 12-15 pcs. / Measuring cup 220 ml
Pour instant dry yeast into the working container, followed by 30-50 g granulated sugar. The rest of the sugar will be used for layering and sprinkling of products. If you want, add vanilla sugar or other flavoring (cinnamon, lemon or orange zest, a couple of drops of concentrate). But I will say that milk and high-quality butter fully saturate the sugar buns with a delicate aroma and create a pleasant and delicate specificity. My recommendation is not to overpower with strong smells and give preference to a creamy crumb. Mix dry ingredients.
Warm the milk until warm (about 37 degrees). Hot/boiling will destroy the yeast and the dough will not rise. A few words about milk. Sterilized or pasteurized, without flavorings and dyes, is suitable. Do not take one percent low fat. The standard 2.5% is just right. Heat 20 g of butter in the same heated milk or separately, it doesn’t matter. Add to bowl. The remaining 30 g of oil will be required for the layer that plays important role in taste and texture. You may be able to stretch the cake thinner and wider/longer than I did. Then you will need more butter for greasing. Keep the butter (those for the layer) at room temperature - soft, melted butter can be easily applied to the dough.
For balance, add a pinch of salt and gradually add wheat flour and first stir with a whisk or spatula - collect the liquid and bulk ingredients together into a viscous mass. Then we transfer it to a countertop or board and sprinkle it with flour little by little. Knead, knead thoroughly until smooth and plastic. We try not to overfill with flour, otherwise we will lose airiness and the buns with sugar will end up heavy, hard and quickly stale.
Roll up a slightly sticky lump, place it in a bowl and cover with cling film. Place in a warm place until it grows 2.5-3 times. If you're lucky with the weather/season, leave it under straight sun rays(in an hour the dough will triple). On cloudy days, create greenhouse conditions (near a hot radiator, a heated oven, in a container with hot water. The main thing is that moisture from the outside does not get on the dough). The proofing time will increase, but don’t rush, wait for the bun to increase in size.
The swollen lump, loosened from the inside, is ready for further action. Take it out and knead it slightly.
Draw out a rectangle about 3-4 mm thick. Feel free to use your own discretion here. Sugar buns can be different, including large pies with filling. Lubricate the layer with soft butter over the entire surface, to the edge. Apply a thick layer, then cover with granulated sugar.
Roll along the length, cut across every 5-7 cm.
Place the prepared buns on parchment with a distance, leave for 15-20 minutes last time- press a cross-shaped indentation with a knife or skewer on top. Cover with egg yolk shaken with a spoon of water and add sugar. Bake in a preheated oven for about half an hour at a temperature of 190-200 degrees. Cool on a baking sheet under a cloth towel.
Miniature and golden brown sugar buns are ready! Serve to the table, enjoy your meal.

After all, at first glance it is almost impossible to distinguish genetically modified vegetables and fruits. There is no composition here, no one will tell us what fertilizers were used to grow the fruits, or where they were stored. But we will skip all the “urgent” problems.
Today I would like to tell you about making “buns”, buns with sugar, with which I spent my entire childhood. Then, walking in the yard, happiness consisted of a sugar bun in the shape of a heart and a warm glass of milk. It's amazing how things change over time, but the tastes remain the same.
This is certainly one of the most famous dishes of Soviet cuisine, which is easy to prepare at home. As always, I took the recipe from my beloved grandmother. The preparation is simple, but there are some subtleties. Join us! The most important thing is to make sweet dough with yeast dough. I give you a simple recipe, the buns turn out incredibly tasty!
1. Mix dry yeast (you can use 50 grams of “live” yeast) with salt and sugar, pour in milk.
Leave it for 5 minutes to activate the yeast. By the way, if you don't have milk, use a glass of warm water, the difference is not significant. I often dilute half a glass of milk with water.
And here’s how our yeast was activated after 5 minutes...
Now add ghee and mix thoroughly.
2. Add flour in a stream, stirring constantly so that there are no lumps.
3. Leave the dough for 30 minutes, during which time it should “shape” and become more tender (come up). Note: stir the dough every 10 minutes. better with your hands, so it will be saturated with oxygen and grow faster each time. The main advantage is that the dough rises much faster.
4. When the dough is ready, make small balls and leave to rise for 10 minutes.
5. Form hearts. To do this, roll out the dough and grease the top sunflower oil.
Roll into rolls and fold in half so that the seam is on the inside. We squeeze the ends with our fingers and make a cut in the middle. Next, we turn out both parts of the heart and our bun is ready. Grease with yolk and sprinkle with sugar.
6. Bake in the oven at temp. 200 gr. - 20-25 minutes.
